Sweet and sour pork

Speedy prep time that can be made a couple of hours in advance to reduce the dinner time rush

Emily's tip

Cooking rice can be difficult to get perfect so why not cheat with some packet rice (no one will be able to tell!)

Ingredients

  • 3 tbsp soft brown sugar
  • 4 tsp dry mustard powder
  • 4 pork chops/steaks
  • 2 dessertspoons of lemon juice
  • 1 can chopped tomatoes (400g)
  • rice (about 400g)

Method

1 Preheat the oven to 170°C/fan 150°C/gas mark 3.

2 Mix the sugar and mustard together in a small bowl. Put the meat into your casserole dish with lid and sprinkle this mixture over the top.

3 Pour the lemon juice over followed by the can of tomatoes. Cook for 1 hour 30 mins.

4 Serve with rice and your choice of vegetables.
