Breakfast fritatta

Enjoy as a leisurely breakfast at the weekend or make ahead and eat on the move during the week

Ingredients

  • 125g new potatoes, boiled
  • 4 cooked gluten-free sausages
  • 1 tbsp vegetable oil
  • 6 eggs, beaten
  • 200g baked beans (small can)
  • 4 medium button mushrooms, sliced
  • 100g cherry tomatoes, halved
  • 1/2 tbsp mixed herbs

Method

1 Start by slicing the cooked potatoes and sausages. Heat the oil in a large frying pan and fry the potatoes and sausages for 2 minutes.

2 Add in the mushrooms, tomatoes, beans and mixed herbs to the pan. Season the beaten eggs with salt and pepper and add these last into your pan. Cook gently for 6-7 minutes.

3 Place under a preheated grill for 3-4 minutes until golden and cooked through. Allow to rest for a few minutes before removing from the pan.
