Turkey Bolognese
A low-fat, one-pan dinner alternative to standard bolognese that does not compromise on flavour

Ingredients
400g turkey mince
200g mushrooms, finely sliced
1 large onion, finely chopped
1 red pepper, deseeded and finely diced
1 tin of chopped tomatoes (400g)
1 tbsp tomato puree
1 tsp mixed herbs
1 tsp gluten-free vegetable stock powder
1 tbsp tomato ketchup
Gluten-free pasta
Method
Cook the onion on a medium heat in a non-stick pan with a splash of water until soft. Add the turkey mince to the pan and cook until fully browned.
Add the mushrooms and red peppers and lightly cook until soft.
Stir in the tinned tomatoes, tomato puree, tomato ketchup, herbs and stock powder, mixing well.
Simmer gently for 30 minutes until the meat is tender.
Serve with your choice of gluten-free pasta and vegetables.
